Homemade Poptarts!


Yesterday, during class, I found a recipe for homemade poptarts tucked into my planner. I remembered that I put it there months ago during work when I was printing off recipes (it was really slow, alright!). It was one of those things that I always wanted to try but of course forgot about. So yesterday afternoon, I took that recipe and made some damn good poptarts, if I don't say so myself.

Ingredients needed:
pie crust
jelly
egg wash
sugar

To make, prepare your basic pie crust. I used the recipe that my mom uses for everything. It's real simple and makes about 2 batches of dough. Feel free to use which ever you prefer.

Basic Pie Crust
2 cups flour
1 cup lard
1/2 tsp salt
1/2 tsp baking powder
1/2 cup mix of 1 egg, 2 tsp vinegar, and water

1. Cut lard into dry ingredients, add egg mixture.

Then roll out your dough and cut into squares. My squares were all different sizes, because I basically eye-balled the whole thing. If you want uniform, I suggest taking a ruler and marking off the sizes you want. Fill one square with your choice of jelly. Take the egg wash and dot it around the edges (this will help the top piece to stick to the bottom piece). Place another square on top and crimp the edges with a fork.

I topped mine off with some more egg wash and sprinkled some sugar on top of that. Throw in the oven at 425 degrees for about 10-11 minutes (less depending on your oven).

Yes! Amazing. Tim and I actually had homemade poptarts at a little coffeehouse in New Mexico on our road trip in March.
